Preparation and Health Benefits of Groundnut Soup

*PEANUT  (groundnut)  SOUP*

 *Recipe:-* 
.Roasted groundnut ( grounded) . we usually call it fried but the right term is roasted.  ( peel before grinding pls)
.Scotch bonnet Pepper 
.Seasoning cube 
.Onions for steaming fresh protein
.Chicken  ( you can use protein of your choice 
.Salt 
.Stockfish 
.Grounded crayfish 
.Dry fish  ( I used smoked mackerel)
.Spinach or hot leaf( uziza leaf) optional 
Tomato puree  ( optional)

Note:- i used tomato paste because I don't like my groundnut soup to be whitish and I don't want to use palm oil because my groundnut already has oil embedded in it naturally and will emit when cooked, as you can see in the picture. 
Now you can also use blended  fresh tomatoes if you don't want to use already processed tomato paste or you can as well  cook without the tomatoes-- the choice is yours. 

 *Procedure:-*
steam your protein with onion, stock cube, grounded fresh pepper, a little salt.  ( you're using a little salt because most times our roasted groundnuts were salted before roasting and we don't want our soup to be over salted. add your Stockfish when steaming so it can be softened before you're done cooking. 
when the protein is properly steamed and ready to be used, add your water for cooking ( taking note of the quantity of your grounded groundnut). add your tomato paste, crayfish, stock cube and bring to boil properly.  add your dry fish or smoked fish, stir and allow to boil some more.  add more pepper if the need be. add the grounded groundnut and stir intermittently to avoid it from burning.  lower your heat and allow it to cook slowly until you begin to notice oil floating on your soup.  at this point, you can add the spinach or hot leaf and cook for about 45 sec to 1min  ( i don't like over cooking my vegs)  or you can as well make do without the leaves.  

This soup can be served with any type of swallow or even boiled white rice.
